A friend of mine, originally from Texas, recently told me that when she has a serious craving for comfort food, the restaurants on the hill just don’t cut it. Well I can now tell her to look no further, because The Rib House has moved from One Boulder Plaza to their new location on the corner of Broadway and University.
Walking in, the space looks and feels like a classic BBQ house; it has simple decorations, a bevy of red-checkered tables, and paper towel dispensers that stand on each table. The sweet smell of barbeque hits you right when you walk through the door, an inviting feeling that is rare among hill restaurants, unless they entice you with their drink deals.
The owners, Merry Ann and Tracey Webb both were born and raised in the barbeque capital of the world, Kansas City, Missouri. After moving to Colorado, they decided to bring with them the technique and flavors of Midwestern BBQ only found in the eateries of Kansas City. Achieving Best Rib House of Colorado honors in 2011, they have definitely found a way to live up to the name of their establishment.
All of their meat is top quality, and are slow hickory smoked for several hours, getting plenty of love. The brisket sandwich I ordered was delicious, and the portions were gut busting. I had my sandwich with the XXX Hot barbeque sauce, which didn’t quite live up to its name, but was still mouth-watering. They also serve their world famous Ribs, along with other meats such as pork, boneless chicken breast, and spicy smoked sausage. The classic sides are a must with any of their dishes, such as the BBQ beans, red skinned mashed potatoes, coleslaw, or potato salad. The Rib House catering service also gives customers an option to share the goodness with friends and family, where servings sizes start at 10 people.
Along with the great food and friendly service, The Rib House has specials suited for students, Monday through Wednesday. Their food specials include Taco Tuesday, where pork tacos are only $1. Wednesday is CU appreciation day, where customers can dine on $6.25 rib baskets. Their location across from campus makes it a really convenient lunch spot for students, teachers, and just about anyone in the area.
My friend and I are really glad to have gotten an authentic barbeque joint on the hill, and I’m sure we are not alone on that feeling.
I love the Rib House! I’m from Longmont and the Rib House there has been one of my favorites for years. Glad to hear the Boulder location lives up to the original. You guys are very lucky to get the student deals, though!
