Boulder increases its repertoire of Italian eateries today, with the addition of PastaVino to Pearl Street’s selection of outstanding culinary variety. I’m sure that you can deduce what type of cuisine chef Fabio Flagiello has decided to focus his craft, given the relatively conspicuous name. A rotating selection of pasta dishes changes daily, and a “distinguished variety” of wine parings accompany traditional Italian dishes like Saltimbocca di Maiale, a pan roasted pork scaloppine, wrapped with prosciutto and sage, in a parmigiano cream sauce, and the infamous Margarita Pizza, of which the Eat Drink Boulder crew has invested much thoughtful inquiry. Might we need to revise our verdict of Pizzeria Locale as the best authentic Margarita pizza in Boulder? A little healthy competition never hurt right?
I have walked by the bright new space PastaVino occupies on the western side of Pearl. The simple, modern interior brings a bright, contemporary addition to the list of existing Italian restaurants in Boulder; It doesn’t even remotely resemble the space’s previous occupant, Juanita’s. I’m excited to see if the food and service are in synch with the décor!
