If you’re like me, and every time you walk down west Pearl, you wonder what is going to replace the old/historic/nostalgic Juanita’s…you now can now relax and have closure to your open-ended question (whew!). Juanita’s is being replaced by…drumroll…an Italian restaurant which will bear the name “PastaVino”. I know what you’re thinking, and no, I’m not a huge fan of that name either…but we’ll give them the benefit of the doubt and will let the food do the talking before passing judgment… Anyway, back to the news: the restaurant is the brainchild of Bacaro’s executive chef, and will focus on simple, organic Italian food that loosely gets its inspiration from the tradition of “Sunday dinners” (anyone from a large Italian family or, like me, has married into one, will know what that means). They are targeting an opening before the end of the month, so get ready, Boulder! Full Daily Camera article here.
