We don’t normally just regurgitate press releases. But the press announcement we received the other day was pretty unique.
It is not every day we Boulderites have the chance to try a seven-course vegan meal. What’s more, the reasonable $54.95 cost sends all profits to the Greenwood Wildlife Rehabilitation Center, a “nonprofit organization that is devoted to the rehabilitation and release of orphaned, injured and sick wildlife”. This Lyons group is the largest of its kind in Colorado and clearly does good things.
But even if you are not into saving cute, cuddly little wildlife creatures, you won’t be able to resist this menu created by Executive Chef (and Frenchman) Laurent Mechin:
Petite Vegetable Amuse Bouche
Stuffed snow pea, bake baby beets, asparagus bundle, tapenade
Green Lentil Soup
curry rubbed tofu
Pita Panzanella Salad
tear drop tomatoes, castelvetrano olives, piquillo peppers, red wine vinaigrette, basil
Tempeh and Winter Vegetables Beggars Purse
peas and carrot coulis
Nishiki Rice Cake
napa cabbage, kimchi broth
Moroccan Couscous
chickpeas, semolina, harissa, cilantro
Dessert
Hand Rolled Chocolate Truffles
